Mint and pineapple are a match made in heaven! Add to that a touch of life and your taste buds will be in seven heaven! And thus this mint pineapple layered cake will impress everyone that gets to taste it! It’s incredibly refreshing and fragrant, not to mention beautiful, having not a single drop of chemical food coloring! Every single color in every layer is obtained naturally! And it’s just the shade of green I love! I find it mesmerizing – it’s so vibrant and beautiful to look at and then taste!

Mint is one of the flavors I feared the most, having tasted essential oils and mint crystals before. But I have discovered the charm of fresh mint and I am hooked to its delicacy. Fresh mint is not bold, but infuses a fresh, cooling aroma to every dessert. You could, of course, use mint extract or mint essential oil in this recipe, but I highly recommend you give it a try first as it is with fresh mint leaves and be mesmerized by it just the way I am!
Pineapple is one of the fruits I most enjoy eating as it is, but I love how it shines in desserts too. However, when using fruits in desserts, I always ask myself one question – how can I process this fruit that when I bite into the dessert I actually get the full fruit flavor?! So for the purpose of tasting the pineapple at its fullest, I chose to process it into a fruit marmalade. And it serves the purpose so well! The pineapple marmalade is just what this cake needs to balance out the mint aroma and tie everything together. It’s that surprising layer that will make you come back for one more slice!
The third flavor of this layered cake is the lime cremeux which is essentially a lime curd enriched with butter to become soft and creamy. This lime layer adds acidity to this cake so the final taste feels like enjoying the best lemonade on a hot summer day. Refreshing at the highest level!
