Almond Orange Cantuccini

There’s no secret that I love biscuits and cookies. I find them to be perfect as day-to-day desserts. And I’ve been waiting for the right opportunity to try new recipes. My first encounter with these cantuccini happened a few years ago and I wasn’t impressed with the result, but today I thought they were worth a second try and I’m glad I did it, because the final result this time is excellent. Cantuccini with almonds and candied orange peel – here are the perfect biscuits for your coffee or tea! Sweet, flavorful, crunchy enough, but capable of soaking up all that coffee – just so so good!

Almond Orange Cantuccini

These almond orange cantuccini are the perfect combo for your cup of tea or coffee. They pack so much flavor and texture!

Cook Time 35 minutes

Ingredients
  

  • 100 g eggs
  • 150 g white granulated sugar
  • 5 g orange zest
  • 15 g honey
  • 50 g melted butter
  • 275 g all-purpose flour
  • 2 g salt
  • 3 g baking powder
  • 120 g chopped almonds
  • 50 g candied orange peel (cut into cubes)
  • 1 egg + 5g milk for brushing

Instructions
 

  • Combine eggs, sugar, orange zest, and honey in a mixer bowl and mix until you get a firm foam.
  • Add the melted butter and mix until smooth, then incorporate the sifted flour with baking powder and salt.
  • Finally, add the chopped almonds and candied orange peel.
  • Briefly knead the dough and let it rest in the refrigerator for 30 minutes.
  • Divide the dough into 3 equal portions and shape each portion into a roll about 30cm long.
  • Brush each roll with the beaten egg mixed with 5g of milk.
  • Bake in a preheated oven at 190°C for 17-19 minutes, then remove from the oven and let cool as quickly as possible, cutting into slices about 1.5cm thick, taking care to cut on the diagonal.
  • Place the obtained biscuits on a baking sheet with the cut side up and put them back in the warm oven until they are completely dry. The goal is to dry them so they can absorb tea or coffee later.
