The Freezer Is Not the Enemy: Why Freezing Matters in Pastry
The freezer is often misunderstood, in pastry and beyond. For many people, “frozen” automatically means old or inferior. In reality, freezing certain types of desserts is part of the production process, used in modern pastry kitchens all over the world. Entremets, individual petit gâteaux, mirror glazes and many other modern desserts simply couldn’t exist without this essential step. In other words, the freezer isn’t the bogeyman – it’s one of the pastry chef’s most indispensable allies.

Why freezing matters in pastry
Freezing provides stability and precision. Without it, many products wouldn’t hold the shape or structure they need. It is used for:
- Assembling entremets and individual desserts
- Unmoulding certain cakes and pastries
- Stabilising mousses
- Achieving clean, even layers
- Handling delicate desserts safely
Without freezing time, many modern desserts would be impossible to make to a high standard.

What is blast freezing and why does it matter?
Professional pastry kitchens use blast chillers to bring down the temperature of products and components very quickly. A blast chiller isn’t a luxury – it’s equipment that improves quality, safety and efficiency.
The benefits of blast freezing include:
- Lower microbiological risk, by bringing components to a safe temperature as fast as possible
- Small ice crystals that don’t damage the texture of the product
- Preserved flavour and freshness
- Better use of working time – components can be made in advance, waiting time is reduced and production is easier to control during busy periods
- Less waste, thanks to short-term storage without loss of texture or flavour
- Better finishes – a colder product takes glazes better and is easier to handle
Freezing gives you much better control over production, along with technical benefits (stable textures, perfect shapes, easy handling and decorating), logistical benefits (working on components faster, making some elements ahead, less time pressure) and economic ones (less waste through better organisation and more efficient use of ingredients).

Frozen doesn’t mean old!
In pastry, freezing doesn’t mean a product is old. Everything is organised according to the FIFO rule – First In, First Out. We always use the products that went into storage first, respecting their expiry dates, so stock rotates correctly and nothing gets forgotten at the back of the fridge or freezer. FIFO isn’t just a recommendation; it’s an essential professional practice that guarantees quality and freshness and reduces waste. What’s more, most pastry products that need freezing are made to order, so the time they spend in the freezer is only the minimum the production process requires.
Some desserts wouldn’t exist without freezing
Without the freezer, we couldn’t make or apply the following correctly and safely:
- Entremets and mousse cakes
- Individual desserts and petit gâteaux
- Certain types of inserts
- Certain decorations
- Mirror glazes
- Perfect layering in some decorations
- Ice cream
The “if it’s frozen, it’s old” myth
This myth isn’t just wrong – it undermines the pastry chef’s work. “Frozen” in pastry doesn’t mean a dessert that has sat in the freezer for two years, or one the pastry chef found forgotten and put in the display case! The truth is that modern pastry wouldn’t exist without the freezer. It is one of a pastry chef’s most valuable pieces of equipment, helping us make desserts that are safe, stable and beautiful.
